Ingredients
3 balls of buratta cheese 12 -16 ozs.
8 Peaches skinned, pitted and cut in wedges
1 lb. of fresh cherries pitted and cut in half
12 oz of grape tomatoes cut in half
3 cloves of garlic chopped
Crustini or baguette slices for serving
Dressing Ingredients:
1/2 bunch of Italian Parsley finely chopped
1 large shallot finely chopped
1 table spoon of fresh oregano
1/4 tablespoon of red pepper flakes.
1/4 cup of torn fresh basil
1/2 cup of EVOO (I use EVOO that is infused with spices)
1/4 cup of Champaign vinegar
Directions
- Put the peaches, cherries and tomatoes in a large bowl.
- In a separate bowl add all the ingredients for the dressing and mix well. Let sit on the counter for an hour or more so the ingredients marry together.
- Pour the dressing over the fruit mixture and toss.
- Prepare you favorite bread.
- Put the fruit mixture in the center of a deep platter. Pull the buratta cheese balls apart and arrange around the fruit. Put the bread around the perimeter of the platter.
